As mummy pig would say “today is a day for pancakes”. Theo has a rotten cold and when he said that he didn’t want to go for a walk, I knew he must have been feeling pretty wick. He asked to make buns, but in all honesty, I’m totally ‘bunned out’ after the weekend… next best thing pancakes.
This is a great little recipe, it’s almost impossible to get wrong and can be changed depending on what mood your in. We’ve had them with banana and walnuts, blueberries and white chocolate and my personal festive favourite, chocolate and orange. Today though, we just went for plain ones – it may be a day for pancakes, but it was not a day for tesco!
– 150g plain flour
– 1 tsp baking powder
– ½ tsp salt
– 2 tbsp sugar
– 130ml milk
– 1 egg
Mix the flour, baking powder, salt and sugar in a bowl. In a jug, whisk together the milk and egg. Pour the milk and egg mixture into the flour mixture and mix until you have a smooth batter. Heat a non-stick frying pan and add a spoonful butter. When it’s melted, add 2 or 3 spoonfuls of the pancake mix, I make them little and you can make 2 or 3 at a time. When the top of the pancake begins to bubble, turn it over and cook until both sides are golden brown. Repeat until all the batter is used up. These keep well, but are amazing hot from the pan.
Theo loves mixing the batter… and eating the pancakes, with a load of butter and a pinch of sugar. He loves watching the process, how ingredients can be mixed and cooked and become something else. He attempts to ‘bake’ with playdoh… my OCD goes into overdrive when the colours get mixed and it all ends up brown… noooo! I like that he enjoys helping in the kitchen – my poor husband is totally useless at cooking, maybe Theo could show him a thing or two?
