Christmas prep..

Theo had nursery this morning, so I thought I’d use the time to chill out and get myself a little bit more organised for Christmas. I can actually see again following yesterday’s ‘eye casualty’ visit which is always useful when baking. These are a super cheat mince pie recipe, which always go down a treat.

Basically you just add a splash of orange juice and some dried cranberries to (shop bought) mincemeat and give it a good stir. Roll out (shop bought) shortcrust and line a muffin tin. Pop a spoonful of mincemeat in each one then pop a lid on top (I like the stars). Bake until golden, allow to cool and dust with icing sugar. Done!   

I also decided to get Theo’s Christmas Eve box ready. We’ve been having lots of fun with our Elf on the Shelf ‘Davis’ and on Christmas Eve Davis will be leaving with Santa, so this is Theo’s goodbye gift. We don’t use the Davis as a ‘spy for Santa’ but have had a lot of fun moving him around for Theo to find each morning.


I wanted to make a box that will last for a few years. We’ve always done a gift on Christmas Eve of pyjamas or a book/film and a few sweets and I like the idea of reusing the same box each year. All you need is some material, a cardboard box with a lid, some decorations and some glue. 

I wanted to use different festive material but I’ve made so many frames this year the grey reindeers were the only pieces I had that were large enough. I’m really happy with how it turned out and I’m sure we’ll use it for many years to come. 

I’ve had so much fun with this blog over the last few months, it’s been very therapeutic getting a lot of things down on ‘paper’. Thanks so much for all the wonderful support and feedback, you’ve no idea how much it means to me. Merry Christmas, enjoy every moment!
